Vegetable Casserole – 11 Tasty Ideas!

Vegetables in Casserole

1. Cauliflower
Turn on the oven at 250 degrees. Place the sliced cauliflower on the oven tray and brush with some olive oil. Add a pinch of salt and pepper. Bake in the oven for 15 minutes. Turn the cauliflower over and let it cook for 10 to 15 minutes. Make sure that the cauliflower does not burn. Every oven is not like the other. You can sprinkle a little grated cheese over it for baking.
2. Broccoli with Tomato
Turn on the oven at 200 degrees. Empty a can of diced tomatoes in the oven dish and spread it over the bottom. Place the precooked potato slices in the dish. Add a good pinch of salt and pepper. Meanwhile, cook the broccoli florets for 5 minutes. Drop them off. Place the cooked broccoli on the potato slices. Add a pinch of salt to the broccoli. Sprinkle some of your favorite shredded cheese over the broccoli. Sprinkle some thyme over it and put it in the oven for 35 minutes.

3. Carrot with peas
Bake (vegan) minced meat with garlic, salt and pepper and place in the oven dish. Drain a jar of peas and carrots in a colander and place on top of the minced meat. Cover the whole thing with mashed potatoes . Sprinkle some cheese over the puree and put it in the oven for about 10 minutes to give the puree a nice colour.
4. Green Beans and (Sweet) Potato
Turn on the oven at 180 degrees. Remove the ends of the green beans. Peel the potato and make small cubes (2 by 2 cm). Make a mix of crushed garlic and oil and stir this through the potato and green beans. Place the vegetable mix on a roasting tray and sprinkle with some salt and pepper. Place the dish in the oven and stir halfway through the time. Let the vegetables cook for 25 minutes. Poke and taste to see if it is cooked enough for you.
5. Sprouts
Turn on the oven at 200 degrees. Clean the sprouts and cut them in half. Add a dash of oil, crushed garlic and some rosemary needles together and stir well. Stir the sprouts into the oil with herbs. Place baking paper on the oven tray and place the sprouts on it. Place the sprouts in the oven halfway through and bake them until nicely browned and cooked through, about 20 minutes. Taste for yourself whether you think the sprouts are cooked enough.
6. Zucchini and Onions
Slice the zucchini and onions. Fry the onion with a crushed garlic in the frying pan. Add the zucchini and cook for 3 minutes or so. Add a can of diced tomatoes and heat well. Add salt and pepper and stir well. Place the vegetables in an oven dish and place the pre-cooked potato slices on top of it. Sprinkle some black pepper and salt, then some grated cheese. Place the tray in the center of the oven for 25 minutes. Pierce the potatoes to see if they are cooked enough for you.
7. Carrot with Parsnips
Turn on the oven at 200 degrees. Grate the carrots and parsnips clean and cut them into thin slices. Place both types of carrots in an oven dish and brush with a little olive oil. Give the carrots a pinch of salt and pepper. Place a sprig of thyme between the carrots in the dish and bake in the oven for 25 minutes. Once out of the oven, you can pour a little balsamic cream over it.

8. Eggplant, Peppers and Onions
Turn on the oven at 180 degrees. Cut the eggplant into slices and the pointed pepper into cubes of 3 by 3 centimeters. Slice the onions. Pour a pack of sieved tomatoes into a baking dish and season with salt, pepper, garlic powder and onion powder. Arrange the aubergine, diced bell pepper and onion slices alternately in the dish with the sieved tomatoes, in a overlapping manner. Insert some thyme sprigs in between. Sprinkle some cheese (or mozzarella) on top and put the dish in the oven for 30 minutes.
9. Leek with Potato
Turn on the oven at 180 degrees. Place the washed (and drained), and sliced leeks in a baking dish. You can now place pre-cooked potato slices on top, but you don’t have to. Pour over the béchamel sauce or cheese sauce. Place the dish in the oven for 20 minutes. Taste to see if you like the leeks cooked.
10. Tomatoes with Onion
Turn on the oven at 220 degrees. Slice the tomatoes. Stir together oil, freshly crushed garlic and some thyme. Place the tomatoes in a baking dish. Place onion rings over it. Pour the herb oil well over the tomatoes. Put the tomatoes in the oven for 15 minutes and then put feta or mozzarella on top of the tomatoes with onion. Bake the tomatoes for another 15 to 20 minutes until cheese starts to brown.
11. Bell pepper
Turn on the oven at 200 degrees. Bake (vegan) minced meat to fill the bell pepper and season it (onion powder, garlic powder, smoked paprika, salt and pepper for example. You don’t need all at once!). Add a chopped onion and chopped tomato and fry it. Take a jar of drained corn (or peas) and let it heat with the minced meat. Cut the bell pepper in half lengthwise and remove the seeds well. Fill the peppers with the mincemeat mixture and sprinkle with cheese if desired. 20 minutes in the oven is usually enough.
