Sauerkraut dish with pineapple
A sauerkraut dish is not as difficult as you think. It can be combined with many other ingredients such as apple, pineapple and raisins. These are tasty counterparts to the sourness of sauerkraut.
Requirements for 4 people:
- 1 pack of sauerkraut
- A few slices of pineapple in pieces
- 50 grams of raisins
- vegetable milk
- Vegetable butter: 2 heaped tablespoons
- 600 to 800 grams of mashed potatoes
- Possibly breadcrumbs
Method:
To make the sauerkraut dish with pineapple you need a large baking dish.
- Turn on the oven at 180 degrees.
- Make mashed potatoes (boil potatoes with some salt, mash with milk and a knob of butter)
- Place half of the mashed potatoes in the baking dish. If you don’t want it to stick, you can put a parchment paper cut to size in the baking dish and then put your mashed potatoes in it.
- Place the cold sauerkraut on top of the mashed potatoes. Take it apart with 2 forks so you can distribute it better.
- Place the pieces of pineapple and raisins on the sauerkraut, divide this over the sauerkraut. Now the other half of the mashed potatoes can be poured over the sauerkraut.
- Sprinkle breadcrumbs over the mashed potatoes with small knobs of butter to make it nice and crispy.
- Place the sauerkraut in the oven and after 25 minutes it will be nice and warm and crispy on top.

Sauerkraut dish with minced meat
A well-known variant is of course with minced meat. What do you need for 4 people:
- Minced meat (vegetable)
- Mustard
- Warm milk
- 1 full tablespoon of butter (vegetable)
- Salt and pepper

- Apple cubes if needed.
- 600 grams of potatoes
- Soy cream and (vegetable) cheese
How are you going to make this sauerkraut dish with minced meat:
- Have all ingredients ready.
- Boil the potatoes in small pieces, this way they will be cooked sooner. You make puree out of it.
- Drain the potatoes and return them to the pan. Add a knob of butter and the warm milk. Mash this well into a delicious puree. Add a tablespoon of mustard to make the dish a bit spicier. Stir well.
- Fry the minced meat with salt and pepper (some vegetable types you only warm up).
- Place a layer of seasoned minced meat in an oven dish. You can place a baking paper on the bottom to prevent it from sticking.
- Separate the cold sauerkraut and stir in the soy cream and apple cubes, if desired.
- Place this cold sauerkraut on the meat.
- Finally, put the mashed potatoes in the oven with the sauerkraut with the cheese.
- Place the sauerkraut dish with minced meat in the middle of the oven for about 20 minutes to half an hour. When the mashed potatoes are nicely colored, the sauerkraut dish with minced meat is ready.

Sauerkraut Oven
A casserole of sauerkraut and raisins is yet another tasty combination. For 4 people you will need the following ingredients:
Ingredients for sauerkraut from the oven:
- 1 pack of sauerkraut
- 600 grams potatoes peeled and cut into small pieces
- salt and pepper
- Warm (soy) milk (about 200 ml)
- 1 onion chopped
- 1 tbsp curry
- Vegetable butter for frying and for the puree
- raisins
- Vegetable cheese from, for example, Violife.
How to make sauerkraut from the oven:
- Have all ingredients ready.
- Boil the potatoes with salt, about 10 minutes. Watch and taste when they are cooked.
- Fry the onion and add the curry. Stir this in and turn off the heat source.
- Drain the potatoes and return them to the pan. Add a splash of warm milk to the potatoes and mash this with a good tablespoon of vegetable butter, fine. Mash until you have a wonderfully smooth puree. Keep adding milk until you have the desired consistency of puree.
- Add a pinch of salt and a pinch of pepper and taste what you think. Add more if you wish.
- Place the cold sauerkraut in an oven dish and break it apart with 2 forks. Stir in the onion.
- Place the puree over the sauerkraut and smooth it with a spoon.
- Sprinkle vegetable cheese over it and place the dish in the middle of the oven because it won’t burn quickly and heats up faster. Check after 15 minutes that the sauerkraut dish does not burn!
- After about 25 minutes, the sauerkraut dish from the oven is ready.

Sauerkraut Dish With Banana
Many people find sauerkraut with banana very tasty. But how you process that in a sauerkraut dish is not known to many. Hence this sauerkraut dish with banana. What do you need for 4 people:
- Sauerkraut for 4 people (1 pack)
- 600 grams potatoes in small pieces
- Chopped onion
- 3 tbsp vegetable butter
- 150 ml warm milk
- 3 bananas cut into planks
- 1 tbsp paprika powder
- Plant-based milk (soy)
- 4 vegetable sausages
How to make a sauerkraut dish with banana:
- Boil the potatoes for 10 minutes.
- Fry the onion in half the butter in a saucepan and add the paprika and sauerkraut, with liquid.
- Stir well and heat with the lid on the pan for 10 minutes. When there is almost no moisture from the packet of sauerkraut, some water (or water or sour white wine) in the pan otherwise it will burn.
- When the potatoes are cooked, drain them and return them to the pan.
- Add the warm milk and 1.5 tablespoons of butter and mash the potatoes into a nice smooth mass. Taste how much salt and pepper you need to add so you don’t get bland sauerkraut.
- Place the sauerkraut in the baking dish and place the banana slices on top. Then put the mashed potatoes on top. When you finish with puree, you get a nice crust on the puree.
- Place the dish in the oven and leave it there for about 20 minutes. When the mashed potatoes are colored, the dish can be removed from the oven.
- Heat the sausage according to the package instructions. There are many delicious varieties!
- Put the sauerkraut on a plate and serve with a delicious vegetable sausage and optional natural gravy.
