How to Season Noodles ? Several tasty variations
How to season noodles? Noodles is a collective name for dough products, made from risen dough. These noodles are boiled in water and further processed with other ingredients. Noodles really just means pasta. In Dutch cuisine, noodles are related to Asian dishes and pastas are related to Italian cuisine. But how can you season noodles, because after all, it’s just pasta.

Noodles is a dish in Asian cuisine what potatoes are for Dutch cuisine. You should always serve some vegetables with it or you can add it to an Indian soup for example. Spices For Noodles
I have already given the spices for noodles above, they are cumin, nutmeg, turmeric, curry, cardamom, coriander (dried), galangal, cloves, cinnamon, pepper and salt
There are also other seasonings that you can use to make noodles tasty. These are:
- onion or ready-made fried onions
- Chinese five spice powder with aniseed, fennel seed, cinnamon, pepper and cloveskruid
- garlic
- ginger
- anise
- Red pepper
- lemongrass
- coriander (fresh)
- soy sauce
- sambal
- lime
- coconut milk
- coin
- basil
- Sesame seed
- sesame oil
Everyone has their own taste preference. I personally don’t like coriander so I won’t often include it in my spice mix, not even for the noodles. However, I am fond of turmeric, soy sauce and the spicy taste of sambal. Choose your own flavors and put together a tasty mix to season and flavor the noodles.
Make your own Noodles Herbs
The basic principle of flavoring noodles starts with sautéing chopped onion, garlic, ginger and red pepper. Then the rest of, for example, the vegetables in the wok and season. Finally, add the cooked noodles.
Smell and taste while cooking whether it meets your taste and do it a little by feel, then it will probably be fine.
Examples of spice mixes are given below. Determine the quantities based on your own taste preferences.
- salt, curry, coriander, turmeric, garlic, ginger, cumin seed, anise, cayenne pepper, cinnamon.
- garlic, salt, ginger, coriander, cumin, turmeric, pepper, cinnamon.
- salt, garlic, ginger, fried onions, coriander, turmeric, cumin seeds.
- salt, ginger, cumin, coriander, paprika, pepper, anise, cinnamon.
As mentioned, I usually start by frying an onion, garlic, ginger and a pepper. You can also give your noodles the desired ‘bite’ by using the following seasonings:
- You can replace the salt by adding soy sauce
- You get spice in your dish by sambal or a red pepper
- the sweet taste usually comes from Ketjap Manis
- the acid of a squeezed lemon or lime
- get the freshness through anise and mint
- the thrill comes from coconut milk
- the surprise comes from sesame seeds.
