Water pudding special for Kilis cuisine: Haytalya dessert

Haytalya dessert, which is considered among the local desserts of Gaziantep, is a light pudding flavored with rose water. On hot summer days, it will both satisfy your sweet needs and not cause you to take too many calories, moreover, it will cool you down.We got the recipe from our master Eyüp Kemal Sevinç, who was selected as the winner of the National Cookery Competition in Turkey.

We bought this refreshing dessert that you can easily make on hot summer days from Chef Eyüp Kemal Sevinç, the first member of the Turkish National Chefs Team. Haytalya is also known as the local dessert of Gaziantep. However, sherbet is made in Gaziantep style and less fruit is used. In our recipe, there is a little sugar water, but we do not prepare sherbet. In Antep-style Haytalya, different ingredients such as almond kernels, optionally pomegranate seeds and black currant are also used. However, we will make this Haytalya recipe with the style of Chef Eyüp Kemal Sevinç.
For Haytalya, milk and water are mixed in equal proportions and cooked by mixing with starch. Of course, the work does not end there. Less fruit is used in the classic recipe of Haytalya dessert. However, we got a fruity recipe from Sevinç. While preparing the recipe, you can diversify it with different seasonal fruits according to your taste.
HAYTALYA MATERIALS
- 1 green apple
- 8 fresh strawberries
- 1 orange
- 1 kiwi
- 50 gr. freshly squeezed orange juice
- 30 gr. sugar water
- 2 gr. rose water
- 3 gr. roasted peanuts
- 40 gr. water pudding
FOR THE WATER CUTE
- 100 gr. this
- 100 gr. milk
- 20 gr. candy
- 20 gr. corn starch
HAYTALYA RECIPE (KİLİS STYLE WATER CUMULA)
- First you have to make the water pudding.
- For this, boil water, sugar and milk.
- Dissolve the cornstarch in a little water and add it to the boiling milk mixture.
- Stir until it thickens.
- Pour the custard into a tray, wait for it to cool.
- Meanwhile, to prepare the sugar water, boil 20 grams of water and 10 grams of sugar together.
- Peel and cut the fruit into small squares and put them in freshly squeezed orange juice.
- Cut the water pudding you prepared into the size of the fruits and add it to the fruit mixture.
- Pour in the sugar water.
- Mix the mixture carefully and slowly, and distribute it into the bowls you will serve.
- Sprinkle with roasted peanuts and serve cold.
