Making homemade tarhana
Take the peppers in a deep pot. Place the onions that you cut in half, and the tomatoes on top. Add 2 glasses of water to the pot and leave the ingredients to boil. When the vegetables are tender, remove the saucepan from the heat and transfer all the ingredients to a large strainer and strain. Put the vegetables in a mixing bowl and add yogurt to it. Open the fresh yeast with water and add it to the vegetables. Mix well until all the ingredients are homogeneous. Add the flour slowly and start kneading and get a runny dough. Rest the dough for 5 hours. Add some more flour, knead again and let it rest again. Let the dough rest for 3-4 days to get sour. In the meantime, add a little more flour every day and knead. At the end of this period, break off large pieces of the tarhana dough, which has become sour, and start to dry on a clean sheet in a cool and sunny place. Dry the tarhana thoroughly for at least 2 days. Then pass it through a food processor and grind it into powder. Store in cloth bags or jars.
