Green onions don’t tend to keep very long once they’re out of the ground. Whether you have a large harvest of green onions or have purchased a large quantity of green onions, the best way to prevent them from going bad is to freeze them!

Luckily, green onions don’t need to be blanched before freezing. The preparation is therefore less time-consuming than for many other types of vegetables.

How to freeze green onions (scallions)?

  1. Prepare the green onions by washing them and peeling the outer layers. You can freeze them whole or, for convenience, cut them into chunks or chop them. If you’re freezing them whole, cut off the stem ends first.
  2. Let the green onions dry for about 30 minutes. This will make them easier to freeze individually and will stick less easily to each other.
  3. Put the green onions in a freezer bag. You can also divide them into individual portions, one portion per freezer bag.
  4. Label the freezer bag with the date and contents.
  5. Close the freezer bag tightly and put it in the freezer.
  6. If you cut your green onions into chunks or chopped them, take the bag out of the freezer after 30 minutes and shake it lightly to separate the chunks. This way the pieces won’t stick together and it will be easier to scoop out small amounts later.

Green onions will keep for about 10 to 12 months in the freezer.

How to thaw green onions?

If you want to incorporate a small amount of green onions into a delicious recipe or dish, you don’t need to thaw them! Simply take the required amount out of the freezer bag and add it directly to the pot or pan.

If you need to thaw your green onions, put them in a bowl and let them thaw in the fridge for several hours.

Can you refreeze green onions?

Once you have thawed your green onions, you should not refreeze them. Store them in the refrigerator and try to consume them within 24 hours of defrosting.
