The food goes in three phases:


You start with the scales. Peel these leaves off the artichoke. A small tug should be enough. When the artichoke is well cooked, the leaves will come loose. You can dip these leaves in a sauce, mustard, mayonnaise or butter.

Then you scrape the pulp off the leaf with your front teeth. You keep doing this until all the pulp is gone. You can also do this with the inner leaves, but you can eat these leaves whole so how not to delete them.


The further you get to the core of the artichoke, the softer the leaves until you get to the hay. These are hairy blades that you cannot eat. This hay is actually the petals. If you put the artichoke in water after purchase, the flowers will probably come out. Of course, you can’t eat artichoke anymore.

You can remove this hay with your hands or you can use a spoon. You can also scrape it off with a knife. You throw this hay away.


After removing the hay, the bottom remains. This bottom is very soft and can easily be cut into pieces. You can dip the bottom in a sauce again and eat it.

Whatever you do with artichoke and however you plan to eat it, make it a party. This vegetable just deserves that.

Artichoke Dip

As mentioned, artichoke food is often dipped in a sauce or vinaigrette. Or simply with vegetable butter or herb butter is also delicious. In addition, a mustard sauce tastes great with artichoke. You can of course also make a special sauce for the artichoke yourself and it does not have to be difficult, for example a tasty garlic sauce. To do this, take the following ingredients:

Artichoke Vinaigrette

A vinaigrette is also wonderfully soft with an artichoke. You can buy it or make it yourself. I give here a simple mustard vinaigrette recipe. You need the following ingredients:
