White Bean Soup Recipe
Beans in soup always immediately provide an extra firm result. Maybe you can remember that delicious black bean soup that I made as part of my Mexico adventure. This is a completely different version and this time I use it with nice big white beans. Just from a can, but if you still have dried beans, you can of course also use them.
In that case, the preparation time is of course not 30 minutes, but many times longer by soaking and cooking the dried white beans. I like to use canned beans for a quick soup. Very easy in this case.
I make the white bean soup by actually first making a kind of paste from the butter with the onions, flour and some of the stock. As a result, the soup binds and you get a nice creamy result.
Serve the white bean soup with good bread, sour cream and fresh dill.
White Bean Soup Recipe
PREPARATION TIME: 30 min CALORIES: 439 kcal
INGREDIENTS
- 800 gr white beans (1 large tin or 2 smaller tins)
- 60 gr butter
- 2 onions chopped
- 1 tbsp flour
- 1 toe garlic crushed
- 1 liter of vegetable stock
- ¼ tsp dried marjoram
- 1 sprig of fresh thyme
- salt
- Pepper
- 125 ml of sour cream
- Dill to serve and good bread
INSTRUCTIONS
- Drain the beans and rinse well.
- Heat the butter in a large casserole and fry the onions until translucent.
- Add the flour and stir well. Add the garlic and fry for a while, stirring continuously.
- Add the stock to the pan and mix well. Make sure there are no lumps in it.
- Add the beans, marjoram and thyme. Season with salt and pepper.
- Cover the pan and cook until the beans are well hot.
- Remove the pan from the heat and stir in the sour cream. Little by little so that it doesn’t split
- Serve with good bread
