Recipe Popcorn-orange cheesecake with red fruit: method of preparation

Popcorn gives this orange cheesecake a very tasty, toasted flavor. A taste that is almost reminiscent of roasted almonds and therefore goes very well with orange.

Grind the biscuits using a food processor or put them in a tea towel and beat them into crumbs using a rolling pin. Put the crumbs in a bowl, add the melted butter and mix well. Cover the bottom of the spring form with baking paper and grease the edges with some oil.

Divide the cookie crumbs over the bottom and press firmly. Put the bottom in the fridge until use. Soak the gelatin in cold water.

Place the milk, sugar and popcorn in a saucepan and bring to a boil and stir until the popcorn starts to soften. Grind the popcorn with a hand blender and rub the mixture through a sieve. Return the popcorn porridge to the pan. Squeeze the gelatin, add to the warm popcorn porridge and stir until the gelatin is completely dissolved. Then add the cream cheese, orange zest and juice and stir with a whisk until completely mixed.

Beat the whipped cream until light yogurt thickness and gently fold the whipped cream into the cream cheese mixture until well blended. Pour the mixture into the spring form. Let the cake stiffen in the fridge for at least 4 hours. Just before serving, decorate the cake with red fruit and some popcorn!

  • 150 g Digestive biscuit
  • 60 g melted butter

Stuffing

  • 5 sheets of gelatin
  • 1 orange zest and juice
  • 250 ml of milk
  • 250 g cream cheese
  • 250 g whipped cream
  • 50 g salted popcorn + extra for garnish
  • 150 g of sugar
  • 300 g mixed red fruit

Supplies

  • 18 cm springform pan
  • Baking paper

INSTRUCTIONS
