Ingredients    

So here are the ingredients with exact quantities you need you to cook this special instant pot fried chicken rice.

Vegetable oil – 1 tablespoon.

Unsalted butter

Garlic – 1 ½ tablespoon garlic powder or garlic paste.

Eggs – 2 eggs.

Chicken breasts – 2 medium size chicken breasts cubed into smaller pieces.

Basmati rice – use basmati rice or you can use any type that has long grains like jasmine rice or brown rice (rinsed very well until the water becomes clear).

Salt – ½ teaspoon.

Black pepper – ½ teaspoon.

Frozen green peas – 1 cup frozen peas.

Carrots – 1 cup carrots thawed.

Chicken broth – 2 1/4 cups (usually we use 1:1 ratio for rice but in this recipe, carrots and peas release liquid during cooking to the chicken broth).

Sesame oil – 1 ½ teaspoon sesame oil.

Soya sauce – 4 to 5 tablespoons (use a low sodium variety).

Green onion and hot sauce – for garnish and are optional.

Step by step instructions

First of all, you need to melt some butter then scramble 2 eggs and set them aside on another plate.

Heat vegetable oil and add garlic powder or paste to it. Fry garlic paste until it is fragrant. So now you have to turn off the flame and pour an exact amount of chicken broth and use a spatula. Food that stuck to the bottom, just scrap it because it will prevent burn warning.

To layer the diced chicken breast evenly, add the remaining broth. After this add diced carrots, peas, and rice respectively. Then push the rice into the broth and don’t stir it anymore.

Now put on the lid on the instant pot and cover it with a high flame for three minutes with keeping off the warming setting.  So at the end, you have to allow the pressure to release naturally and it will take 10 minutes.

Put sesame oil and soya sauce and coat rice evenly.

Now stir in scrambled eggs that are reserved. Set the lid on the pot for making it warm and fresh.

Finally, you have to serve it immediately in your meal’s container.

Tips:

If you want to preserve this recipe, you can preserve it for 4 days but for this purpose, you have to put this recipe in the refrigerator after making it cool naturally.

If you want to make this recipe a healthy dish for you and your family then rinse the rice very well until the water becomes clear. It will reduce starch from the rice.

If there is food stuck to the bottom, just scrap it to prevent burn warning.

Use white long grains such as basmati rice, Jasmin rice, or brown rice to make your recipe delicious and a good texture that will persuade your guests.

Use a variety of soya sauce which contains low sodium and if you are sensitive to salt this tip is especially for you.
