Basil Artichoke Soup Ingredients

  • 2 tablespoons of extra virgin olive oil
  • ½ tablespoon of butter
  • 1 small onion finely chopped
  • 2 spring onions finely chopped
  • 4 medium artichokes (peeled, washed, diced)
  • 1 small potato (diced)
  • 1/2 bunch dill chopped
  • Fresh basil (chopped)
  • 1 glass of milk
  • 4 glasses of water

HOW TO PREPARE THE ARTICKER SOUP WITH BASIL

  • Put 1 tablespoon of olive oil and butter in a saucepan.
  • Add onion and cook until slightly translucent.
  • Add potatoes and artichokes and cook for 1 more minute, stirring.
  • Add the fresh onions and add enough warm water to cover it and cook until the vegetables are soft.
  • Before removing from the fire, add fresh basil and boil for a while.
  • It is passed through a food processor.
  • At this stage, milk is added and hot water can be added until the consistency of the soup is desired.
  • The soup is taken from the stove after it is boiled for one more time.
