Champignons are usually bought for a specific dish, and not for future use, so they usually disappear from the refrigerator within a couple of days. Although mushrooms can be stored for up to 2 weeks, after a week the mushrooms will begin to dry out, wrinkle and darken, and therefore lose their original taste. In order for the mushrooms to last longer, choose them by the date of collection and pay attention to their appearance, dense medium-sized mushrooms with a white cut on the stem – a guarantee of the maximum shelf life.

If you bought sliced ​​champignons, their shelf life is reduced to 10 days, and without loss of taste – to only 2-3 days.

How to keep mushrooms longer?

If you are lucky enough to snatch a lot of mushrooms, you can freeze them. And given that mushrooms take up quite a lot of space, to reduce the volume, mushrooms should be fried. It is easy to do this: heat the vegetable oil in a frying pan, and then put the chopped champignons, salt them a little and fry for 25-30 minutes until the moisture evaporates. Then cool the mushrooms, place in containers and store in the freezer. Within 3 months, the mushrooms will be edible.

Can champignons be dried?

Champignons are usually not dried, as their taste is too delicate and it is a stretch to restore it with the subsequent soaking of dried champignons. However, in extreme cases, dry the mushrooms for 10-12 hours at a temperature of 60 degrees in the oven with the door ajar. Transfer the mushrooms to a zip bag and put in a dry, dark, cool place. You can also grind dried mushrooms into powder and use them for sauces and soups. The shelf life of dried mushrooms is 1 year.
