How to make delicious and simple braised pork stew at home

Braised pork is a rustic dish, easy to make with a harmonious combination of pork belly, dried shrimp and some commonly used spices.

Kho quat is a rustic dish, familiar to Southern people, often served with hot rice or boiled vegetables. If you’ve ever enjoyed and been fascinated with the salty, spicy, sweet, and fatty flavors of this dish, don’t rush to miss the simple recipe below.

Just prepare a few ingredients and follow the simple steps and you can get a delicious and delicious finished product.

Ingredients for making dried shrimp gravy: Fatty pork belly: 200g; Dried shrimp: 50g. Spices: Scallions, chili, pepper, sugar, salt, fish sauce, cooking oil.

Process materials

Choose a fresh piece of pork belly with a lot of fat. When you buy it, wash it with diluted salt water, let it dry or pat dry, then cut it into bite-sized pieces. You can also use pork fat instead of pork belly if you want the braised pork fat to be more fatty.

Peel the shallots and garlic, use a knife to crush and chop finely. Wash green onions and chop them into bite-sized pieces. Wash the peppers and cut them into slices or leave them whole.

Soak dried shrimp in warm water until soft, then rinse with clean water and drain.

Make fish sauce and roast the meat to reduce fat

Mix 8 tablespoons of fish sauce with 4 tablespoons of sugar and 4 tablespoons of filtered water, stir well.

Put 1 tablespoon of cooking oil in the pan, turn on medium heat and fry the pork belly for about 5 – 6 minutes, until the meat has lost all fat and is golden and crispy. Take it out and drain. 

If using entirely pork fat, to make the pork fat crispier, add a few grains of salt when frying.

Make light storage

Put 3 tablespoons of cooking oil in the pot, add minced shallot and saute until fragrant.

When the purple onions are fragrant, add dried shrimp, fried pork belly, and 1/2 teaspoon of seasoning powder and stir for about 2 minutes.

Add a cup of ready-made fish sauce to the meat pot. Add 1 teaspoon of pepper and 2 chili peppers.

Braise the braised rim for another 20 minutes over low heat, until the sauce thickens, then add chopped green onions. Season to taste and turn off the stove.

During the time of simmering the braised pork, you can take advantage of the time to prepare vegetables and tubers, wash them with diluted salt water, cut them into bite-sized pieces and steam or boil them. 

After being braised with dried shrimp and pork fat, it will have a beautiful brown color and attractive aroma. When served with boiled vegetables and rice, it is extremely delicious.

You also need to note that to cook delicious braised pork belly, you should not choose pork belly with too much fat because when eaten, it will be dry and greasy because the pork belly has all the fat. You should choose a clay pot for braising because clay pots help retain the natural flavor better.

In particular, when making braised pork, you should not use fresh shrimp, because dried shrimp has the true aroma of braised shrimp. You should choose small shrimp.
