Whole wheat pasta salad with peas

Almost always when we eat pasta at home (and that is often) I prepare some extra pasta so that I have enough at home for a quick lunch salad. Because in addition to a hot meal, pasta is also ideally suited for lunch. Like this pasta salad with artichoke.

You don’t need a lot of time to make this wholemeal pasta salad, provided you have already cooked that pasta and the chicken fillet is already cooked.

Making the pasta salad

You can of course also use regular pasta to make the pasta salad, but I like whole grain pasta because it contains at least a bit more fiber compared to white pasta. But I use it interchangeably depending on what I have left.

For the chicken fillet, I alternately use regular chicken fillet or I use smoked chicken fillet. For the speed, the smoked chicken fillet is very fine so that I don’t have to cook the chicken too.

I then supplement the wholemeal pasta salad with lots of green peas. I use them from the freezer but I blanch them briefly in boiling water.

The rest of the whole grain pasta salad contains mostly raw ingredients. That makes this salad particularly suitable to take with you for lunch. Or to make a slightly larger portion so that you can keep a portion in the refrigerator.

If you eat at home and you don’t like to eat a cold whole-grain pasta salad, you can of course also choose to warm it up. You can also eat it lukewarm.

With grated cheese

And alternatively, you can also eat the whole grain pasta salad with some grated cheese. I add some pesto and a few tablespoons of mayonnaise as a sauce. That makes it a wonderful whole. You can check exactly how to make it in the recipe below.

INGREDIENTS

  • 100 gr whole wheat pasta cooked
  • 75 gr peas
  • 100 gr chicken fillet cooked and cut into pieces
  • 2 tbsp pesto
  • 100 gr pepper in cubes
  • 100 g of cucumber in cubes
  • 2 tbsp calve light and creamy
  • fresh basil

INSTRUCTIONS

  1. For the sauce, mix the pesto and mayonnaise together. Taste if it still needs some salt and pepper, but usually that is not the case
  2. Mix the wholemeal pasta with the peas, pieces of chicken fillet, pepper cubes, and cucumber cubes and stir well.
  3. Mix in the pesto sauce and serve with fresh basil
