  7. Add 1 tsp sambal and a pinch of salt. If you don’t like very spicy, sweet and sour cucumber, add half a teaspoon of sambal.

  • 1 cucumber 
  • 1 red onion 
  • 200 ml vinegar 
  • 150ml water 
  • 6 allspice grains  
  • Possibly 1 Madame Jeanette 

To make Surinamese cucumber you can follow the following guidelines: 

  1. Peel the cucumber thinly and cut it in half lengthwise. 
  2. Scrape the seeds from the cucumber halves with a teaspoon. 
  3. Peel the red onion and cut it in half. Cut the red onion into cubes or strips. 
  4. Add the vinegar, water, sugar and allspice grains together in a bowl and stir well.  
  5. Place the onions and cucumber in the bowl and stir well. Keep it in the fridge while you’re not using it. Taste what you think of your homemade sweet and sour and season with what you are missing (salt, pepper).
  6. You can put the pepper, Madame Jeanette, through the sweet and sour cucumber. Keep in mind that this is (one of) the hottest peppers. Wash your hands after use!

  2. Now use a vegetable peeler to peel all thin strips of the cucumber from top to bottom.
