How to Season Kale

Kale is a large shrub with hard leaves. Cooking them makes them soft. It is therefore often used in a kale stew, only make as cabbage, it is also delicious on your plate. Kale is packed with vitamins and minerals. In addition, kale is tasty and can be seasoned with many herbs.

Of course, it’s not just the herbs that give flavor to the kale stew. How about Amsterdam silver onions, piccalilli, a finely chopped onion or mustard. And the (vegetarian) smoked sausage and bacon also go well with this. Enough options to season the kale ‘normally’ and special. If you don’t have one or a number of herbs at home, just use something else or leave it out. There are plenty of other herbs you can use.

Kale Herbs

There are different types of herbs that are available in dried and fresh form. Our recipes are made with dried herbs, in this blog but feel free to take fresh ones if you have them at home or if you like them.  

Some dried herbs still need to be crushed, such as nutmeg, which you could grate if it’s not powdered, or bay leaf if you want to use it as a powder.   

The teaspoons and tablespoons are level in these herbal recipes, so without a head on it, unless otherwise indicated.

Making Kale

Making kale easy is done in no time. The kale below is used as the basis for the recipes discussed in this blog. What you need for 4 people are the following ingredients:

  • 600 grams of kale 
  • 1 kilo potatoes (crumbly) peeled
  • 80 grams vegetable butter 
  • 200 ml plant-based milk 
  • Salt and pepper
  • 1 tsp onion powder

The preparation method is as follows:

  1. Wash the kale and cut it into strips. Add the chopped potatoes to the kale in the pan.
  2. Put water in the pan, add salt and put the vegetables in it. Make sure the potatoes and kale are well submerged in water.  
  3. Boil the kale and potatoes for about 20 minutes and check if they are tender.  
  4. Drain kale and potatoes and return them to the pan.  
  5. Add the butter to the kale and potatoes. 
  6. Add the warm (soy) milk.  
  7. Mash and stir everything together well.  

This is your base for kale stew.  

The following kale seasoning recipe is a short recipe but one that I like to use on a busy weekday. Quickly prepared, easy, tasty and bears healthy!  

Stew Kale Herbs

This is an easy recipe. So ready and delicious. You will need the following ingredients:

  • Pepper  
  • 1 tbsp mustard 
  • Vegetarian bacon
  • Splash of sunflower oil for baking 
  • gravy 
  • Piccalilly

The preparation method is as follows:

  1. Prepare the kale as described above.  
  2. Taste to see if there is enough salt, if not, add more.  
  3. Add a tablespoon of mustard (or more) to the kale. 
  4. Heat a frying pan with some oil and fry the vegetarian bacon.  
  5. Place the bacon in a bowl. 
  6. Make gravy with a bag of natural gravy (the vegetarian bacon does not have gravy), read the instructions for use.
  7. Place the kale in a bowl or put the pan on the table. 
  8. Serve well and add some bacon and gravy. A spoonful of piccalilli also tastes very good with kale

Below is an easy and quick recipe for kale stew.

Herbs For Kale

You need four seasonings for this kale recipe. They are the following:

  • 1 finely chopped onion 
  • 2 cloves garlic crushed 
  • 2 tsp curry 
  • 2 sprigs parsley finely chopped (leaves only, no stalks)

Preparation goes as follows:

  1. Prepare the kale as described above.  
  2. Fry an onion for about 5 minutes 
  3. Add the garlic during the last 2 minutes and fry it. Keep stirring otherwise it will burn. 
  4. Stir the curry into the onion mixture and stir well.
  5. Pour the onion mixture into the kale stew and stir well.  
  6. Taste to see if there are enough herbs in the kale, otherwise add more. 
  7. Serve in a nice bowl or with the pan on the table, garnished with parsley.

Making Kale Herbs

This amount of herbs, which are described below, is an amount to keep. You don’t use this all at once. Store the herbs in a sealed jar. You can then store the herbs for six months, provided they have not become wet.  

It may be that you don’t have certain herbs in your house right now or don’t like them. Feel free to omit this herb. It will be a different taste experience, but it will also be tasty because all these herbs ‘fit’ with kale. 

I leave the amount you use to your taste buds. Try and taste often in between when you add herbs to kale.

  • ½ tsp celery powder 
  • 1 tsp chervil 
  • 1 tsp pepper 
  • 1 tsp salt 
  • 1 tsp onion powder 
  • 1 tbsp mustard or 1 tsp mustard powder  
  • 1 tsp caraway seeds (powder) 

Prepare the kale as described above.  

  1. Pound and stir the herbs in the mortar until they are very small. You can also use a small food processor. 
  2. Sprinkle 1 level tablespoon of homemade herbs over the kale, as described above. 
  3. Stir it well so that it is evenly distributed. If you are going to use mustard instead of mustard powder, you can now add the mustard.   
  4. Taste to see if you have added enough herbs, otherwise, you can add more. Enjoy your meal! 

If you want to work extensively with herbs, below is a recipe with many herbs that can be used with kale. This amount is also to keep. Not to use all at once. 

Kale Stew Herbs

This recipe is also delicious as a homemade spice mix. Make it 3 double and you can immediately sprinkle an amount over the kale next time. What you need is the following:

  • 2 tsp salt  
  • 1 tsp onion powder 
  • 1 tsp celery seed 
  • 1 tsp nutmeg
  • ½ tsp pepper   
  • 1 tsp coriander
  • 1 tsp turmeric 
  • 1 tsp cumin powder 

This kale is so seasoned that bacon is not necessary. A day without meat or meat substitute is also nice! 

  1. Prepare the kale as described above.  
  2. Crush all spices in a mortar. Could also be done in a food processor.  
  3. Gradually add about 1 level tablespoon of spices. 
  4. Taste to see if there are enough spices, otherwise add more spices. 

The great thing about this spice mix is ​​that you can add your favorite spice to it. For example, if you like coriander, you can add some coriander, fresh or dried. That way it really becomes your spice mix.

Below is an extensive recipe with Mediterranean herbs for kale. Something different! 

Herbs Kale 

For this kale you will need the following herbs:

  • 1 tsp onion powder 
  • 1 tsp garlic powder 
  • Pepper and salt  
  • 1 tsp rosemary 
  • 1 tsp nutmeg
  • ½ tsp turmeric 
  • 1 tsp marjoram 
  • 1 bay leaf 

The preparation is as follows:

  1. Add the bay leaf to the water from the kale and potatoes when cooking. After cooking, take out the whole leaf and throw it away.   
  2. Stir all spices together. 
  3. Season the kale with 1 level tablespoon of your own mixed spice mix. Sprinkle it well so it is easier to distribute while stirring the kale. 
  4. Taste how the kale tastes and add spices if necessary. 
  5.  The rest (if you have one) can be stored in a tightly closed jar.
